Dominican University continues popular community dinner program

Dominican University’s nutrition and dietetics program is continuing this fall its popular Recipe Box Café community dinner program. A 50-year tradition, the three-course dinner program will be held Thursday evenings, October 3 through November 7 at 5:30 p.m. in the university’s beautiful Shaffer-Silveri Atrium in Parmer Hall, 7900 W. Division Street, River Forest.

Guests are treated to a three-course meal, including appetizer, entrée and dessert, prepared by nutrition and dietetics students enrolled in the Quantity Food Production and Service course. The students are responsible for planning, purchasing, preparing and presenting nutritional meals for up to 70 people. They are supervised by Ann Johnson, an adjunct professor in the nutrition and dietetics program and a graduate of the Culinary School of the Rockies and Kansas State University’s graduate program in food science, and Rhonda Scott-Brei, owner of Tuscan Flavors, a local business offering cooking classes. Scotto-Bleu has a certificate from Le Cordon Bleu College of Culinary Arts.

The October 3 dinner will focus on Italian cuisine, starting with spinach salad with goat cheese and roasted beets, continuing with lasagna and ending with lemon sorbet and raspberry sauce. The menu on October 10 will include dill cucumber salad with Greek yogurt and Austrian rye bread, turkey breast roulade served with spatzle and roasted seasonal vegetables, and apple crisp and vanilla ice cream with homemade caramel sauce. ·        October 17—bean medley tapenade with toast points, baked cod with mango salsa and roasted baby potatoes, cappuccino surprise

·        October 24—Polish dill pickle soup, chicken kiev with brussel sprouts and kasha, nutella mousse

·        October 31—pumpkin soup, falafel with black rice tabbouleh, tsatsiki sauce served with carrots and hummus, pear upside down cake with chocolate drizzle

·        November 7—salsa trio with tortilla chips, beef fajitas with Mexican rice and beans served with sour cream and lime, Mexican flan with fresh berries
